Ingredients
- 8 slices of wholegrain bread
- 1 a ripe avocado, sliced into strips
- 2 cups of grated carrot
- 1 1/2 tablespoons (20ml) mustard
- 2 sliced tomatoes
- 1/2 sliced cucumber
- 1 head of lettuce
Method
This fresh sandwich is easy to prepare and the combination of the wholegrain bread and fresh vegetables gives it a real crunch. Method:
- Spread the mustard onto each side of the bread.
- Place the lettuce leaves and tomato slices and any other optional ingredients on one side of the bread
- Top the whole thing with the remaining slice of bread
- Wrap up in cling film and store in your lunchbox.
