Hummus on wholegrain pita bread

Ingredients

  • 50mls tahini (use a little olive oil or sesame oil if you can't get hold of any tahini)
  • 1-2 teaspoons of lemon juice
  • About 100mls water
  • 200g Chickpeas (tinned or dried chickpeas that have been soaked and cooked)
  • Salt and pepper to taste
  • 1 clove of garlic (optional)
  • pita bread

Method

  1. Put the chickpeas, lemon juice, tahini, garlic, salt and pepper in a blender and blend
  2. Add a little of the water to make a stiff paste. The amount of water you need will vary so add a little at a time
  3. You can add a little more salt and pepper or lemon juice to taste. You can also add some olive oil for extra richness.

Tip: Pulses like beans and chickpeas are rich in fibre as well as being a good source of iron. As many children and adults in Ireland are low in iron, it is important to have some iron rich foods everyday. Being low in iron can make you feel tired, irritable and run down.
