Ingredients
- Any French dressing
- 2 green apple (preferable Granny Smith's)
- 4 sticks of celery
- 4 spring onions/scallions
- 4 breast of chicken, grilled and sliced (or use any leftover chicken you might have from a roast)
- 4 teaspoon mixed fresh thyme and rosemary, well chopped (optional, but don't use dried instead)
- 1 head of broccoli
Method
- Get a large salad bowl and add the chopped chicken
- Break the broccoli into bite size florets and add to the bowl with the sliced celery, chopped apple and
- Finely sliced spring onions/scallions
- Sprinkle over the fresh herbs and pour over any French salad dressing
- You can also top this salad with a mixture of seeds like pumpkin, sunflower seeds or pine nuts for extra crunch.
Tip: Chicken is a tasty, low fat food that is rich in iron and protein. It is tender enough for any age group and really works well in salads. Try mixing chicken either grilled chicken breast or left over roast chicken with any crisp vegetables and good salad dressing. Look for dressings made with olive oil and use just enough to coat the salad.
