Fresh or tinned salmon sandwiches with celery on wholegrain bread

Ingredients

  • lettuce
  • 1 tablespoon low fat mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 cup chopped celery
  • 1 (6 ounce) can pink salmon, drained
  • 1/8 teaspoon pepper
  • 2 slices wholegrain bread

Method

In a mixing bowl, add together the salmon, celery, mayonnaise, lemon juice, and pepper until smooth.

Place a lettuce leaf and about 1/2 cup salmon salad in each sandwich
